Tomato, Olive & Cilantro Pasta Salad


Yesterday was a free for all when lunch came around. We ended up just grabbing a bunch of ingredients, throwing them together, adding more here and there and stirred it all up. What’d we get? A very delicious, joint effort pasta salad! So yummy and FRESH! Perfect for a warm summer day, a picnic, etc. Hope you enjoy it as much as we did 🙂

Tomato, Olive & Cilantro Pasta Salad

Ingredients

  • 1 red bell pepper, diced
  • 1 small yellow onion, diced
  • 1/2c diced fresh cilantro
  • 1/2c reduced fat feta cheese
  • 1 tsp sea salt
  • 1 tsp fresh ground pepper
  • 1/8c balsamic vinegar (adjust to taste)
  • 2 medium tomatoes, diced
  • 1/4c pitted olives
  • 1 box pasta of choice (we used rigatoni)

 

Directions

  1. Cook pasta as directed on box
  2. While pasta is cooking, cut up all ingredients and add in large mixing bowl
  3. Drain pasta and add to mixing bowl
  4. Refrigerate for 30 minutes or until chilled
  5. Enjoy!
