Pumpkin Protein Pudding


My absolute favorite post-workout staple. Perfect after a run, a session at the gym, a random snack, dessert, breakfast, etc. Delicious, fresh AND healthy. It helps that it’s full of healthy protein. The possibilities are endless.

Pumpkin Protein Pudding

Ingredients

  • 1/4c canned pumpkin
  • 1/8 tsp vanilla extract
  • 1/8 tsp ground cinnamon
  • 1/2 scoop vanilla protein powder
  • 6oz nonfat plain greek yogurt
  • 1/8 tsp pumpkin pie spice (optional- for an even more pumpkiny/fall kick)
  • 1 tsp vanilla pudding mix (optional-for a more dessert/sweet taste)

Directions

  1. In a small bowl combine all ingredients
  2. Top with pumpkin spice granola (as shown), fresh fruit or enjoy on it’s own
