Turkey Chili


Comforting yet healthy chili for a cool or rainy day.

Turkey Chili

 

Ingredients

-10 oz extra lean ground turkey
-1/2 small yellow onion, chopped
-1 large red bell pepper, seeded and chopped
-1/2 small can of sweet corn (4 oz), undrained
-1/2 can of black beans (8oz), drained and rinsed
-2 cups of diced tomatoes  undrained
-1/2 small can of tomato paste (3oz)
-1/2 tbsp chili powder
-1/2 tbsp onion powder
-1/2 tbsp dried cilantro
-1/4 tbsp ground cumin

Directions

  1. Brown the turkey in a non-stick skillet over medium heat
  2. Spray the inside of the crock pot with non-stick cooking spray (makes is much easier to clean!)
  3. Add all the ingredients to a crock pot with 1 tomato paste can of water (6oz)
  4. Mix well to combine, it will thicken and dry (not a lot of liquid)
  5. Cover and cook on high for 3 hours or on low for 5-6 hours
  6. Enjoy! Extra delicious when served with homemade biscuits
